Kidney Friendly Feta Cheese Substitute

A low sodium, plant based recipe for feta cheese that is kidney and heart healthy.

Ingredients

  • 1 14 oz block extra firm tofu drained and pressed
  • 2 tbsp water
  • 1 tsp white miso paste
  • 1 tbsp apple cider vinegar
  • 1 tsp lemon juice
  • 2 tbsp avocado oil can sub olive oil
  • 1 tbsp nutritional yeast
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt

Instructions

  • Press the water out of the tofu for 5-10 minutes before using.
  • While the tofu is pressing, make your marinade.
  • Add all of the ingredients (besides the tofu) to a small mixing bowl to combine.
  • Pour the marinade into a shallow food storage container.
  • Crumble the tofu directly on top of the marinade in the dish.
  • Stir well to spread marinade evenly over the tofu. Put the lid on, give it a shake, and store in the fridge for at least 1 hour prior to using.
