How to make a Kidney-Friendly Barley & Veggie Salad

This flavorful salad brings together barley, a prebiotic-rich whole grain, with fresh vegetables for a delicious and kidney-friendly meal. Barley is naturally low in potassium, making it a great choice for those managing Chronic Kidney Disease.

Instructions

  1. Cook the barley: Rinse and cook ~ 3/4 cup of barley according to package instructions. You will use 2 cups of cooked barley for the recipe. Set aside to cool.
  2. Prepare the vegetables: Chop the cucumber and bell pepper, and finely chop/dice the onion.
  3. Drain and rinse canned chickpeas: lower the sodium content of canned chickpeas by draining and rinsing them in a strainer.
  4. Make the dressing: In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, and salt and pepper.
  5. Combine the salad: In a large bowl, mix the cooled barley with the prepared vegetables. Drizzle the dressing over the salad and toss to combine.
  6. Cool the salad: If your barley wasn’t already cold you will want to place the salad in the fridge for at least 1 hour. This will cool the salad and allow the dressing flavors to set in.
  7. Serve and enjoy: Enjoy this refreshing and filling salad as a main or side dish to complement your kidney-friendly meals.

Kidney-Friendly Barley & Veggie Salad

Ingredients

  • 2 cups cooked barley (cooled) Use leftover cooked barley or a quick cook barley
  • 2 cups cucumber, chopped
  • 2 cups bell pepper, chopped
  • 1/2 cup red onion, diced
  • 1.5 cups cooked chickpeas or 1 can of low sodium chickpeas, drained and rinsed

Dressing

  • 1 each juice from lemon
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar can sub apple cider vinegar or other vinegar
  • 2 cloves garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Cook quick barley per package instructions and let it cool. Or you can use leftover barley from the fridge.
  • Place cooled barley in a large bowl and add chopped veggies and chickpeas to the bowl.
  • Mix the dressing ingredients in a separate bowl and then pour over the salad.
  • Mix the salad to ensure it is evenly dressed. Place in the fridge for an hour or more and then enjoy!

          Hi Jill! The recipe/nutrition info is for a meal sized portion (565 mg potassium). A low potassium meal typically ranges from 500-800 mg potassium so this fits right in that range and leaves room for additions depending on the individual’s other nutrient needs. If this is more of a side dish, the recipe makes 8 one cup servings and is roughly only 280 mg potassium per serving!

    I’m wondering if we should use pearled barley which has less potassium, or hulled barley which has more potassium but also more fibre and other benefits. Is it OK to use hulled barley in a general way if we want to be kind to our kidneys?

      Great question! You can definitely use either! Pearled barley is still a great source of fiber, plant protein, vitamins and minerals (just slightly lower than hulled barley). Hulled parley is ~ 50 mg more potassium per serving compared to pearled barley so it is not a major difference 🙂

  2. Loving this salad that I made this morning. No barley, so subbed pearl farrow per one of your options, and it was perfect. Used black pepper but did not need salt. (Rinsed well “no-salt added” chickpeas.) Sprinkled fresh cilantro before eating, and toasted slice of Ezekial bread.
