Blueberry Chia Pudding

Quick and easy renal diet breakfast

This blueberry chia pudding can be prepared the night before, making for a quick breakfast on the go! There are several things that make this a great breakfast if you have Chronic Kidney Disease.

  1. It is high in fiber which is important for people with Diabetes managing blood sugar. Fiber is also beneficial to improve gut health and reduce uremic toxins in kidney disease.
  2. The chia seeds and walnuts provide plant protein which is easier on the kidneys. Almond milk is a lower protein/potassium plant milk. If you need more protein, you could use soymilk or a pea protein milk (both are higher in potassium). Just make sure that you get one that doesn’t have any phosphorus additives!
  3. This is a low potassium meal. At only 385 mg potassium for the whole recipe, there’s plenty of room to add more fruit, nuts or seeds if you need/want to!
  4. It is negative PRAL (potential renal acid load). This means the kidneys don’t have to work so hard!

How to make it

It’s so simple to make this Blueberry Chia Pudding! Add the plant milk, chia seeds, vanilla extract and cinnamon to a mason jar (or bowl). Keep in the fridge over night. In the morning, add your fruit and nuts and enjoy!

If you are using frozen blueberries, you can add them to the jar the night before so that they have time to thaw (unless you like eating them frozen).

Feel free to add more blueberries or other fruit based on your individual potassium needs!

Blueberry Chia Pudding

Ingredients

  • 3/4 cup plain, unsweetened almond milk or other plant milk without phos additives
  • 2 tbsp chia seeds
  • 1/4 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 cup fresh blueberries or frozen/thawed
  • 1/4 cup chopped raw walnuts

Instructions

  • Combine almond milk, chia seeds, vanilla extract and cinnamon in a mason jar and store in the fridge over night.
  • Add blueberries and walnuts in the morning and enjoy!
